SAVE THE DATE – The Saint Mary’s men’s basketball team made the Sweet 16. They play Baylor in Houston this Friday, March 27th, 7:27 ET. It’s the first time since 1959 the Gaels have won in tournament play. Cause to celebrate? I think so!
Seeing as flights from Oakland to Houston are a staggering $800, I’m not going to make it and neither will my friends. It won’t keep us from cheering on the boys though and there’s no better way to enjoy a game than with a cold beer and some good appetizers.
One of my favorite finger foods are Baked Potato Wedges with a Garlic Basil Dip. This is a perfect low fat option, that’s packed with flavor. I like to make a lot of dip. Not only does it last a long time in the refrigerator, it’s great with all sorts of veggies or as a spread for a sandwich. For Friday though, I want something a little heartier than vegetables and potatoes are just the thing.
Garlic Basil Dip
2 cups fat free mayonnaise
¼ cup packed fresh basil, chopped
4 cloves garlic, minced
1 lemon, zested and juiced
Combine all the ingredients in a bowl and mix thoroughly. Refrigerate for at least two hours before serving.
