Graduation's Almost Here…


I can’t believe graduation is almost here.  Time has flown by and soon I will be saying good-bye, packing up my apartment and moving home.  I often find farewells a bitter experience, and there won’t be much difference this time.  What I will take with me is a strong support system of friends whose kindness and love are not determined by distance.

For now, there is cause to celebrate and I can’t think of a better way than throwing a party.  Friday I have invited my friends over for food, drinks and games.  I planned my menu last week with five things, trying to make sure there was something for everyone.  It seems everyone these days has some sort of food restriction.  I love being able to feed all of my friends, so a little planning goes a long way.  I picked up 3 large bouquets of basil at the farmers market on Sunday, along with 15 lemons and a whole bunch of garlic.  At one of my favorite stands, they had green garlic and I couldn’t resist.  One more item landed on the menu.

On Friday’s menu:

Chicken Skewers with Peanut Sauce
Grilled Apricots with Balsamic reduction
Roasted Tomato and Garlic Bruschetta
Lettuce Wraps
Lemon Basil Muffins
Green Garlic Pesto Quesadillas with Caramelized Onion

I continued my shopping adventure at Costco yesterday, picking up chicken, cherry tomatoes, apricots and a couple baguettes.  From Costco, I went to Trader Joes for onions, zucchini and whole-wheat tortillas.  I finished my shopping at Safeway, where I bought limes, pre-pealed garlic, carrots, 2 heads of iceberg lettuce, red bell peppers and chili peppers.

One of the best things about this menu is how much of it can be made ahead of time which leaves me lots of time to talk with friends! And of course, it’s budget friendly.
