Beauties of Home – Avocado and Orange Salad

I don’t know about you, but when I come home my mom pulls out all the stops and just lets loose.  I might gain 10 pounds in the next few days but it will be well worth it.  Last night with our steak and potatoes my mom made a  mixed green salad that was to die for!  It was full of fruit and rich creamy avocado, and I DEFINITELY went back for seconds.  My mom used store bought salad dressing, but I  think it would have been better with a little bit of homemade balsamic vinaigrette like JuJus and I have started using a lot.

Avocado and Orange Salad

Serves 4

Three large hands full of mixed greens
1 large orange, segmented (cubing would be fine as well)
1 avocado, cubed
½ cup feta cheese
Sprinkled handful of slivered almonds

Balsamic Vinaigrette

There are a lot of variations, but this one is simple and quick.  Most things you read about dressings say equal parts vinegar to oil, but I really like it with less oil.

½ cup balsamic vinegar
¼ olive oil
1 TBS Dijon mustard
Salt and pepper to taste.

Put everything in a jar, secure the lid and shake.  Check seasoning and dress salad. Recipe in print-friendly format
